中泰木薯淀粉在酸奶中应用特点:
(1)无异味,可提高产品的光亮度,并赋予特殊的组织结构,提供一个乳脂状的、有光泽的质地,使低脂奶达到类似高脂奶的组织状态,可提供醇厚口感;
(2)增稠稳定性好,与奶中的脂肪完全包容,有助于防止酪蛋白沉淀及乳清析出,不会被菌种利用降解;
(3)增加产品低温储藏稳定性
(4)改善产品延展性、整体结构
(5)降低奶粉、亲水性胶体、明胶等稳定剂的用量,增加乳制品固形物含量。
